Thai Red Curry ( Prawn's)

Thai Curry is a coconut milk based dish using Prawns/chicken/ Crab/Bamboo shallots / Pineapple with a blend of many ground spices. The ground spices is available in most stores as Curry paste. There are basically 5 types of curry paste, of which red curry & green curry are most popular.
Some of the types of  thai curry paste are :-

Red Curry -  Ingredients are red chili peppers (fresh or dried), shallots, garlic, galangal, lemon grass, coriander roots, peppercorns, salt, shrimp paste and kaffir lime zest.

Green Curry - Similar to red curry but uses green chilli instead of red chillis

Yellow Curry - Here turmeric is added hence the color

Thai Curry is an easy to make dish and will help in making an easy dinner meal especially if you have sudden guests. You can decide on a Thai / Sino cuisine with some soup, chicken starters, rice & thai curry. The good things thai cuisine is that the only one curry needs to be made and the dinner table looks complete.

Here is how my recipe goes..
Ingredients :-

2 tbsp Pack -Thai red curry shrimp paste ( available in most stores)
1/2 Kg large sized prawns
Onion Shallots - 2 long one's cut into not more than 6 pieces ( 1 inch length)
Coconut Milk - 2 cups
Oil - 1 tsp
Salt to season
Lemon grass - for decoration

Marination - Chilli powder ( 2 tsp), Ginger Garlic Paste ( 1 tsp), Salt

Marinate the prawns & keep aside for 1/2 an hour. Heat oil in a wok, add the red curry paste and saute it. Add the prawns and cook it closed for 15 Mins.Stir in the coconut milk and salt as per taste. Take the dish off the stove when it just begins to boil.Decorate with a sprig of lemon grass before serving.

You can improvise it a bit by using other fresh herbs, vegetables like long beens etc
