Brinjal Rava Fry

For the last 2 weeks my kitchen is completely on the veggie regime and both of us are loving it for a change. There is actually so much to make in vegetarian food. So here is something new that I tried last week.Original recipe is by my colleague who bought this as side dish for lunch the other day.
Brinjal / Bhaigan or egg plant is something which is an easy to cook and highly nutritous vegetable.It is high in pottassium and calcium with apt amount of dietary fiber.

Ingredients

Brinjal - Medium sized , 2 no:s

Marinate

Semolina ( Rava ) - 2 - 3 Tbsp
Ginger Paste - 1 tsp
Garlic - 1/ 2tsp
Black Pepper powder - 1 tbsp
Salt to taste
Turmeric Powder - 1 tsp
Garam masala ( optional ) - tsp

Oil for shallow frying

Method - Mix all ingredients for the marinate well. Cut the brinjal into thin round pieces. Marinate it with the mixture. Heat very little oil in a pan. Shallow fry the brinjals, cook covered. Turn sides as required. Serve hot

Alternately it can be microwaved too.. Since the Brinjals are easy to cook, it does not take too much time or oil. If there is any marinate left, then use it for potatoes or even large sized onions in the same method.

It is quite an easy fix, as an " add on " side dish and really does not take too much time. Especially if microwaved or baked, oil usage will also be less
